In the top pan of a double boiler placed over gently simmering water, heat and stir Mint Meltaways until chocolate is melted and smooth. Cool slightly.
To serve, scoop ice cream into 4 chilled dessert dishes. Top with melted Mint Meltaways, which will form a hard shell over the ice cream as it stands a few minutes. If you like, serve with additional individual mint meltaways on the side.
