  • Peel and section grapefruit and orange, reserving juices. Add enough additional orange and/or grapefruit juice to combined reserved juices to equal 1 cup citrus juice. Set juice and sections aside.

  • Sprinkle chicken with salt and pepper. In a large skillet, cook chicken in hot oil over medium-high heat about 12 minutes or until tender and no longer pink (170°F), turning once. Transfer to a serving platter; keep warm.

  • Meanwhile, in a medium saucepan, combine brown sugar and cornstarch. Stir in the reserved citrus juice and the orange liqueur. Cook and stir until thickened and bubbly. Cook and stir for 2 minutes more. Add fruit sections; heat through. If you like, stir in cherries.

  • Spoon fruit sauce over chicken. Serve with greens. Makes 4 servings.
