We packed this snack mix with extra protein and nutrients by adding soy nuts. You can find plain or flavored roasted soy nuts at large supermarkets or health-food stores.

Ingredients

  • 3 cups bite-size square corn cereal

  • 3 cups bite-size square rice cereal

  • 3 cups bite-size square wheat cereal

  • 1 cup salted roasted soy nuts or corn nuts

  • 1 cup small fat-free pretzel knots

  • 1 cup fish-shape cheddar cheese crackers

  • ¼ cup olive oil or canola oil

  • 2 tablespoons dried Italian seasoning, crushed

  • 2 tablespoons grated Parmesan cheese

  • 2 tablespoons finely snipped dried tomatoes (not oil-packed)

  • 1 tablespoon reduced-sodium Worcestershire sauce

  • ¼ teaspoon ground black pepper

Directions

  1. In a large roasting pan, combine the cereals, soy nuts, pretzels and crackers; set aside.

  2. In a small bowl, combine oil, Italian seasoning, Parmesan cheese, dried tomatoes, Worcestershire sauce and pepper. Pour oil mixture over cereal mixture in pan; toss until well coated.

  3. Bake, uncovered, in a 300° oven for 30 minutes, stirring twice during baking. Spread snack mix on a large sheet of foil to cool, then store in an airtight container for up to 2 weeks.
