In a 1-quart liquid measure or bowl, stir together celery, sugar, water and celery seed; let stand 10 minutes, stirring occasionally until sugar dissolves. Cover and chill 8 hours or overnight.Advertisement
Strain through a fine mesh strainer. Transfer to a bottle or jar; store syrup in refrigerator for to 2 weeks.
To Make Celery Soda or Cocktails:
Pour about 2 tablespoons syrup over ice in glass. Top with chilled seltzer or club soda. Add a squeeze of lemon if you like. For a spiked drink, add an ounce or two of gin, too.
