  • In a large skillet, toast coconut over medium heat until browned; remove from skillet. Add butter to skillet. When melted, add pineapple. Cook over medium-high heat, stirring occasionally until juices are evaporated and pineapple is nicely browned. (This will take about 15 minutes.)
