In a medium bowl, toss together the apples and baking soda; set aside.
In a large mixing bowl, beat together the sugar and butter with an electric mixer until creamed. Add eggs and beat well.
Stir together the flour, cinnamon, salt, and nutmeg. Add to large mixing bowl and beat until combined. Stir in apple mixture and nuts.
Evenly spread batter into a greased 13x9x2-inch baking pan. Bake in a 350 degree F oven for about 45 minutes. Serve warm or at room temperature topped with whipped cream. Makes 12 servings.
