Salty bacon and Cajun seasoning liven up this veggie mixture for a hearty side.




  • Place bacon pieces in 15x10x1-inch baking pan and bake in 425°F oven for 8 to 10 minutes or until crisp. Using a slotted spoon remove bacon and drain on paper towels. Stir corn, edamame, onion, red sweet pepper and Cajun seasoning into drippings in pan. Roast for 15 to 20 minutes or until vegetables are tender, stirring halfway through. Stir in bacon pieces to serve.
