  • Preheat oven to 375°. Heat olive oil in a large oven-safe skillet over medium-high; toss in cauliflower and salt. Cover and cook, stirring occasionally, until softened, about 5 minutes. Add cayenne pepper sauce and butter to skillet. Simmer, uncovered, over medium until butter melts and sauce is reduced, about 2 minutes. Remove from heat.

  • Stir in sour cream and cream cheese. Add Colby cheese, stirring in a handful at a time before adding another. Bake until bubbly and golden, about 15 minutes.

  • Top with sliced green onions and, if desired, blue cheese. Let cool 5 minutes before serving with celery sticks, carrot sticks and/or chips for dipping.
