  • In a large bowl, stir together the flour, baking soda, baking powder, salt, and cloves.

  • In a medium bowl, mix together the eggs, sugar, oil, and vanilla. Add to the flour mixture with the apples, raisins, and pecans, stirring just until moistened.

  • Line 2-3/4-inch muffin cups with paper bake cups. Spoon batter into cups until 2/3 full. Bake in a 400 degree F oven for 15 to 20 minutes or until done. Serve warm or cool. Makes 24 muffins.

Tips

If you like, substitute ground cinnamon or nutmeg for cloves. Also, to make only 12 muffins, halve the ingredients, except use 2/3 cup cooking oil.

To reduce cholesterol, substitute refrigerated or frozen egg product for the whole eggs.
