  • Spray a 9x9x2-inch baking pan with nonstick cooking spray. Set aside.

  • In a bowl, stir together the flour, cornmeal, sugar, baking powder,and salt.

  • In another bowl, beat together the egg whites, milk, and cooking oil. Add to flour mixture and stir until the batter is smooth (do not overbeat). Pour batter into the prepared pan.

  • Bake in a 425 degree F oven for 20 to 25 minutes or until golden. Makes 9 servings.

Corn Sticks or Corn Muffins:

Prepare the Low-Fat Corn Bread Squares batter as directed. Spray corn-stick pans or muffin pans with the nonstick cooking spray. Spoon the batter into prepared pans, filling 2/3 full. Bake in a 425 degree F oven for 12 to 15 minutes or until golden. Lightly grease the hot corn-stick pans to bake remaining batter. Makes 24 to 26 sticks or 12 muffins.
