Grease a 9x5x3-inch loaf pan. In a mixing bowl, combine flour, baking powder, salt, and nutmeg.
In another bowl, combine eggs, sugar, eggnog, butter, vanilla, and rum extract, if you like. Add to dry mixture. Stir until just moistened (batter should be lumpy). Spoon into prepared pan.
Bake in a 350 degree F oven for 40 to 45 minutes or until a wooden toothpick inserted near center comes out clean. Cool on a wire rack for 10 minutes.
Remove bread from pan; cool on the wire rack. Wrap and store overnight before slicing. Makes 16 servings.
