  • Grease a 9x5x3-inch loaf pan. In a mixing bowl, combine flour, baking powder, salt, and nutmeg.

  • In another bowl, combine eggs, sugar, eggnog, butter, vanilla, and rum extract, if you like. Add to dry mixture. Stir until just moistened (batter should be lumpy). Spoon into prepared pan.

  • Bake in a 350 degree F oven for 40 to 45 minutes or until a wooden toothpick inserted near center comes out clean. Cool on a wire rack for 10 minutes.

  • Remove bread from pan; cool on the wire rack. Wrap and store overnight before slicing. Makes 16 servings.
