  • In a large saucepan combine undrained peas, sausage and onion. Bring mixture to boiling. Reduce heat and simmer, covered, for 20 to 25 minutes or until onion is tender, stirring occasionally.

  • To serve, spoon black-eyed peas over rice. Pass bottled hot pepper sauce.
