In a medium saucepan, brown the rice in cooking oil about 3 to 5 minutes or till light brown.
Stir in the chicken broth, tomato sauce, and water.
Bring the mixture to boiling; reduce heat. Cover and simmer for 18 to 20 minutes or until rice is done. Serve warm. Garnish with fresh cilantro sprigs, if you like. Makes 4 servings.
To reduce the sodium, use low-sodium chicken broth and tomato sauce.
