In a large bowl, toss together the bread cubes, potatoes, carrot, celery, parsley, poultry seasoning (if you like), and salt.
Add eggs and liquid to bowl, stirring gently until combined. Add chicken, if you like; toss. Transfer to a well-buttered 2-quart rectangular baking dish.
Bake in a 350 degree F oven 45 to 50 minutes or until brown on top. Makes 8 to 10 side-dish servings.
To make dried bread cubes, spread fresh bread cubes (start with 16 slices) in a shallow baking pan. Bake in a 300 degree F oven for 10 to 15 minutes, stirring the cubes once.
