Heat 2 inches of cooking oil in a deep-fat fryer or heavy saucepan to 375 degree F.
Cut each tortilla into 8 wedges. Fry wedges, 4 at a time, in deep, hot oil for 1 minute on each side or until golden, turning once. Drain on paper towels.
In a small bowl, mix sugar and cinnamon. Sprinkle over fried wedges. Store in tightly covered container at room temperature. Makes 32 wedges.
