Line two 15x10x1-inch baking pans with parchment paper or nonstick foil. Bake potatoes in the prepared pans according to package directions. Sprinkle with cheese and bake 4 to 5 minutes more or until cheese is golden brown.
Serve hot with toothpicks and desired ketchup.
In a small bowl stir together ketchup and chipotle chile peppers in adobo sauce. Makes 1 cup.
Stir balsamic vinegar and snipped fresh basil into ketchup.
