You're in the Dairy State, so cheese flights join wine and beer flights in this upscale neighborhood bar.

A new next-door companion business to the venerable Wisconsin Cheese Mart that's been around since the 1930s, the Uber Tap Room and Cheese Bar brings the idea of tasting flights to the world of cheese. OK, maybe it's not so different from a sampler platter. But this spot feels fresh and classy, a place that wants to give cheese its due. The ambience is relaxing, with butter-yellow walls and seating on stools along a wooden bar or a long central table. The shop is located in Milwaukee's Historic Third Ward, the city's traditional retail food district. Cheese lovers will enjoy the menu because flights include a lot of unusual, high-quality varieties -- a nine-year-old cheddar, a Gruyere, a crumbly blue and so on. The different cheese flights on the menu (about $9) are meant to be paired with wines (available by the glass or in flights) or, interestingly Wisconsin beers. The Uber Tap Room and Cheese Bar has more than 50 Wisconsin beers on the menu, most of them in bottles. The wine/cheese flights make sense; the beer/cheese flights seem a little contrived because the cheese flights don't recommend specific beers to match them. One server suggested a light pilsner to go with the Wisconsin Sampler; another specified a porter. Special events, such as a Sprecher beer and cheese tasting evening, seem to be a bit more dialed in. Nonetheless, it's a fun idea and worth giving the Uber Tap Room and Cheese Bar some time to find its groove.
