It's a noble quest to attempt to create the world's most delicious turtle-style chocolate candy, and that's just what the Kohler Company intended a few years back -- the result was the delicious Terrapin, along with a full complement of Kohler Custom Chocolates and a European-style bistro cafe and kitchen to serve them in. The Craverie Chocolatier Cafe splits its menu into two parts, one Indulgence and one Lean. They offer an extensive list of pastries, sandwiches, pastas, kettle soups, salads, signature coffees, wine, beer and more, though the star remains the chocolate. The candies are made on-site in an exposed central kitchen, and the knowledgeable staff makes eating here an experience. Most fun to look at are the Rare Facet chocolates, each jewel-shaped and infused with many different kinds of fruit. The Garden Ganache are hand-painted and hand-polished, and the truffles, toffees, chocolate bars, barks and brittles are equally delicious. For an adventure, try pairing beer and chocolate -- they bring out the complexities in each other, and the beer bubbles cleanse the palate in a way wine doesn't. We like the Oscar's Stout with the Dark Mountain Hazlenut toffee, and Central Waters Brewing Company's Mudpuppy Porter with the Nutty Terrapin. Linger at a table, or retire to the couch by the fireplace and look out at Woodlake. All chocolates are available in gift packages, and the Craverie is open every day from 7 a.m. to 9 p.m.
