Carr Valley Cheese is one of Wisconsin's best cheese companies, offering everything from intriguing artisan blues served in restaurants across the country to old-school curds you could fry up and eat with a beer. They have several shops across Wisconsin; this one in the suburbs of Madison leans a bit more foodie, with an emphasis on the company's finer cheeses: Cocoa Cardona (a hard cheese with a cocoa-rubbed rind), Billy Blue (made of goat's milk and aged for four months), Apple Smoked Cheddar (dusted in paprika). The strip-mall location isn't anything remarkable, nor is the interior, but the cashiers know their stuff, offer samples and talk you through the incredible variety of flavors available. Prices (upwards of $18 per pound for the fancier cheese) are fair, given the quality and local lineage; this is cheese you'll savor by the sliver, not grate by the pound.
