Just one bite of pastry cream-filled brioche is enough to induce swooning in fans of the delicious baked goods at Salty Tart Bakery in Minneapolis’ Midtown Global Market.
Chef-owner and James Beard Award nominee Michelle Gayer and her team make everything on site using local organic ingredients whenever possible. Forget girly garnishes and frou-frou frostings, Salty Tart focuses on highlighting boldly flavored ingredients like cracked vanilla beans, glazed coconut—even beer and red wine. The caramelized onion and bacon quiche, for example, is packed with large pieces of bacon and onions that have been browned to exactly the right degree of sweetness. The crispy seasonal tarts made with whatever fruit is at its peak are worth mentioning, as are the chocolate strawberry version. Visitors can also purchase fresh-baked breads and custom cakes.
The store is a bright little oasis in the middle of the market, with its cheerful green-and-white striped awning. Small chandeliers hang above the display cases, silver cake stands groan under tempting goodies, and a cooler holds additional items that need to be kept chilled.
