Three years ago, Will Branch and Zachary Klein decided to team up and create a line of artisanal handmade sausages, an innovative undertaking in the traditional meat-loving town of Detroit. Corridor Sausage Co. products are currently only available at a few select local outlets, but the duo has recently signed a lease to start producing their wares in a new facility at Detroit’s Eastern Market. Eager fans are hoping this new venture will mean increased output and availability for their favorite meaty treats.
The creatively flavored sausages are delicious, including variations like bacon and beer, Vietnamese chicken, green curry and pork, and Moroccan lamb and fig. Will and Zachary use only fresh herbs and spices and have expanded their lineup into a limited number of charcuterie items. Catch ‘em where you can; the sausages, offered simply in a one-pound pack of four for $8, sell out fast and furiously at farmers markets. In the future, Will and Zachary plan to branch out into the realm of rillettes, terrines, salumi, pepperoni and pate.
