Chef Matt Prentice oversees several metro restaurants. He's best known for the innovative contemporary American menu and extensive wine list at his swank Coach Insignia. The restaurant commands panoramic views of Detroit and neighboring Canada from its perch on the glass-walled 71st floor of the GM Global Renaissance Center. Comfortable bites, such as grilled lamb loin and chilled poached shrimp, share the menu with go-ahead-try-it specialties: lobster corn dogs and smoked salmon tostadas.
