Smells of maple smoke and fish mingle in a blue haze rising from Fishtown's weathered buildings along Lake Michigan in Leland (about 30 miles northwest of Traverse City). The scents waft from Carlson's Fisheries, where chubs and whitefish are delicately smoked before going on display in a glass case with other freshly caught fish. The Carlson family has been fishing the waters off Leland since the 1860s, and chances are good that if you eat a whitefish supper in the Traverse City area, it's a Carlson-caught fish. Carlson's smoked chubs even show up as organic swizzle sticks in the Chubby Mary's served in the bar at Leland's Rick's Cafe.
