Known primarily for the history and politics that rule the town, Springfield, Illinois, is also home to a beloved bakery that's sweeter than any backroom deal. Incredibly Delicious dates back to 1995, when it opened as the mail-order supplier of Incredibly Delicious Flourless Chocolate Cake. Sales were slow, so the business segued into a one-room bakery selling cakes and French baguettes.
Fast-forward 16 years. The menu still features that decadent signature cake—made with three types of chocolate imported from France—in addition to a litany of tempting French pastries, red velvet cake, lemon tarts, breakfast and lunch items, locally sourced salads, sandwiches and soups. Each item is better than the next, from the comforting cinnamon morning bun to the chewy chocolate croissant. Everything is best savored on the premises, a gorgeous 1845 Italianate mansion where the bakery owners and their three children also live.
The property takes in 5,000 square feet of space, with four distinct dining rooms and two outdoor areas surrounded by gardens and lush greenery. The comfortable homelike setting has become a popular gathering place for the Springfield community, and groups meet regularly to discuss politics, study or just enjoy a pastry.
