This casual roadside restaurant about 40 miles northeast of St. Louis is famous for its Foot-Hi Pies -- banana, chocolate, coconut cream and lemon meringue.

Next time you find yourself on Interstate-70 in southern Illinois and hankering for a meal, skip the drive-through and take Exit 30 for the Blue Springs Cafe. Both locals and travelers stop here for hearty, just-like-Grandma-made meals served on blue-gingham tablecloths.Family-style dinners start with light-as-a-feather biscuits with apple butter, tangy pickled beets and sweet-and-sour coleslaw. Popular entrees include fall-off-the-bone baked chicken and a deliciously moist meatloaf, served with sides of real mashed potatoes, applesauce and meltingly overcooked (the way they should be, in a restaurant like this) green beans with bacon and onion. If you come for lunch, order the baked beans, a colorful medley of lima, kidney and navy beans in a tangy tomato sauce. And save room for the only dessert in the house--Foot-Hi Pie. Coconut cream is a sure bet; the meringue never weeps, and the filling isn't too sweet.Because Blue Springs keeps its menu short, the kitchen produces the food quickly. So it's reasonable for travelers to stop, have a full-course meal and be back on the road in an hour. Most dinner entrees cost about $11, and portions are generous enough that you might have food leftover to munch on as you continue your trip.
