Try this unusual, sweet and tangy summer relish on grilled chicken breasts, turkey tenderloins or pork chops.

Ingredients

  • 3 tablespoons balsamic vinegar
  • 1 tablespoon honey
  • 1 tablespoon chopped fresh mint
  • 1 teaspoon olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon cracked black pepper
  • 1 medium zucchini (about 8 ounces), finely chopped (1 3/4 cups)
  • 1 shallot, chopped (2 tablespoons)
  • 1 cup coarsely chopped strawberries

Directions

  1. In a medium bowl, whisk together vinegar, honey, mint, oil, salt and pepper. Add zucchini, shallot and strawberries; toss to coat. Serve immediately or cover and refrigerate up to 4 hours.
