Honey-Glazed Carrots
Ingredients
- 1 pound carrots, cut into 1/4-inch-thick slices (3 cups)
- 2 tablespoons water
- 2 tablespoons honey
- 1 tablespoon butter or margarine
- 1/8 teaspoon ground ginger
Directions
1. In a microwave-safe baking dish or casserole, combine the carrots and water. Cover and microcook on 100 percent power (high) for 7 to 9 minutes or until carrots are just tender, stirring once after 4 minutes. Drain off water.
2. Add the honey, butter, and ginger to the baking dish. Cover; microcook for 1 to 2 minutes more. Stir until combined. Serve warm. Makes 4 servings.
