  • 2 pounds potatoes (yellow or white fleshed) peeled and quartered
  • 1 3 - ounce package cream cheese, cut up and softened
  • 1 clove garlic, minced
  • 2 tablespoons snipped fresh chives
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 3 -4 tablespoons milk
  • 1/4 teaspoon paprika
  • 1 tablespoon butter

  1. In large saucepan, cook potatoes in salted boiling water 20 to 25 minutes or until tender. Drain; return to saucepan.
  2. Beat the potatoes in the saucepan with an electric mixer until mashed. Add cream cheese, garlic, chives, salt and pepper. Beat until combined. Gradually add enough milk to make fluffy.
  3. Transfer the mixture to a greased 1-quart casserole dish. Sprinkle with the paprika and dot with the butter. Bake, uncovered, in a 350 degree F oven for 20 to 25 minutes or until heated.
