Eight-Vegetable Medley
Ingredients
- 6 okra, sliced
- 2 tomatoes, chopped (1-3/4 cups)
- 2 summer squash, sliced (3-1/2 cups)
- 1 green or red sweet pepper or 1 fresh chili pepper, chopped*
- 1/2 small cabbage, shredded (2-1/2 cups)
- 1 small onion, chopped (1/3 cup)
- 1/2 eggplant, peeled and cubed (2 cups)
- 1 large clove garlic, finely chopped
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- 2 tablespoons bacon drippings or shortening
Directions
1. In a large bowl, combine okra, summer squash, cabbage, eggplant, tomatoes, sweet pepper, onion, garlic, salt, and black pepper. Toss to combine.
2. In a 12-inch skillet, heat bacon drippings or shortening until hot. Add vegetables. Cook over medium heat for about 10 minutes, turning frequently, until crisp-tender. Makes 8 side-dish servings.
