Easy-Does-It Sweet Potatoes
Ingredients
- 2 to 3 sweet potatoes (1 pound)
- 1 tablespoon butter or margarine
- 1/2 cup chopped pancetta or ham
- 1/4 cup finely chopped shallots or onion
- 1 teaspoon snipped fresh parsley
- 1/8 teaspoon pepper
Directions
1. Peel the sweet potatoes and thinly slice (you'll have about 3 cups).
2. In a large skillet, melt butter or margarine. Add potatoes, pancetta or ham, shallots, and parsley. Sprinkle with pepper.
3. Cook, uncovered, over medium heat for 8 to 10 minutes or until the potatoes are tender and beginning to brown, stirring gently occasionally. Makes 4 to 6 side-dish servings.
