Tomato-Butter Pan Sauce with Mint

This luscious (and easy!) sauce is good enough to eat with a spoon. If you're feeling more civilized than that, try it over pasta or seared or grilled chicken or whitefish, or as an appetizer dipping sauce with bread.
cloves garlic, minced
cherry tomatoes, halved
chopped fresh mint
crushed red pepper
- In a medium saucepan, heat olive oil over medium heat. Add garlic and cook 1 minute, stirring frequently.
- Add tomatoes, mint, salt and crushed red pepper. Reduce heat to medium-low. Cook, stirring occasionally, until tomatoes are very tender and breaking apart, about 15 minutes
- Remove from heat. Stir in butter until melted.
- Serve over fish, chicken, pasta or toasted crusty bread.
