This luscious (and easy!) sauce is good enough to eat with a spoon. If you're feeling more civilized than that, try it over pasta or seared or grilled chicken or whitefish, or as an appetizer dipping sauce with bread.


  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 pint cherry tomatoes, halved
  • 1/4 cup chopped fresh mint
  • 1/4 teaspoon salt
  • 1/8 teaspoon crushed red pepper
  • 2 tablespoons butter


  1. In a medium saucepan, heat olive oil over medium heat. Add garlic and cook 1 minute, stirring frequently.
  2. Add tomatoes, mint, salt and crushed red pepper. Reduce heat to medium-low. Cook, stirring occasionally, until tomatoes are very tender and breaking apart, about 15 minutes
  3. Remove from heat. Stir in butter until melted.

Serve With

  • Serve over fish, chicken, pasta or toasted crusty bread.
