Its hard to top the divine trio of a tender biscuit, soft whipped cream and juicy strawberries, so our ideas keep those basic elements but add a little twist.

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/4 cup sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking soda
  • 1/3 cup cold butter
  • 1 egg, lightly beaten
  • 1/2 cup sour cream or plain yogurt
  • 3 tablespoons milk
  • 5 cups sliced fresh strawberries, divided
  • 3 tablespoons sugar
  • 1 Sweetened Whipped Cream (recipe follows)

Directions

  1. Preheat oven to 400 degrees . In a medium bowl, combine flour, the 1/4 cup sugar, the baking powder, salt and baking soda. Using a pastry blender or your fingers, cut or rub in butter until mixture resembles coarse crumbs. Make a well in the center. In a small bowl, stir together egg, sour cream and milk. Add to flour mixture all at once, stirring with a fork just until moistened.
  2. Drop dough into eight mounds on a baking sheet lined with parchment paper. Bake for 12 to 15 minutes or until golden brown. Transfer to wire rack; cool completely.
  3. Meanwhile, in a medium bowl, combine 4 cups of the strawberries and the 3 tablespoons sugar. If desired, mash slightly with a fork or a potato masher. To serve, split shortcakes horizontally. Fill with the whipped cream and sweetened berries; top with remaining berries.

Variation

  • Double-Chocolate Shortcake Prepare Shortcake as directed, except reduce flour 1 1/4 cups and add 1/4 cup unsweetened cocoa powder. After cutting in butter, add 1/4 cup miniature semisweet chocolate pieces. Drizzle assembled shortcakes with chocolate-flavored syrup to serve.

Variation

  • Honeyed Goat Cheese Shortcakes Prepare Shortcake as directed. Prepare berries as directed, substituting honey for the sugar. Instead of Sweetened Whipped Cream, prepare Whipped Goat Cheese as follows: Beat 2 ounces soft goat cheese (chevre), 2 tablespoons whipping cream, 1 tablespoon honey and 1/2 teaspoon vanilla until smooth. Add 3/4 cup plus 2 tablespoons whipping cream to the mixture in the bowl. Whip until thickened. Assemble shortcakes. Drizzle assembled shortcakes with additional honey.

Sweetened Whipped Cream

Ingredients

  • 1 cup whipping cream
  • 2 tablespoons sugar
  • 1/2 teaspoon vanilla

Directions

  1. In a chilled bowl combine whipping cream, sugar, and vanilla. Beat with an electric mixer on medium speed until soft peaks form (tips curl).
