Egg and Herb Tea Sandwiches
Ingredients
- 2 hard-cooked eggs, peeled and finely chopped
- 2 tablespoons snipped fresh watercress, chives or parsley
- 1 tablespoon mayonnaise or salad dressing
- 1/8 teaspoon salt
- 1/8 teaspoon ground white pepper
- 1 tablespoon chopped olives (optional)
- 4 thin slices home-style whole-wheat and/or white bread
- 1 tablespoon butter, softened
Directions
1. In a small bowl, stir together the eggs, watercress, mayonnaise, salt and pepper with a fork till well mixed. Mix in olives, if you like.
2. Trim crusts from bread. Butter 1 side of each slice. Spread the egg mixture on 2 of the buttered bread slices. Top with remaining bread slices, buttered side down. Press lightly together.
3. Cut each of the 2 sandwiches into 3 fingers. Secure with toothpicks decorated with olive pieces, if you like. Arrange on a serving platter. Makes 6 servings.
