Winter Sparkle Salad
Chill: 4 hrs
Ingredients
- 1 apple
- 2 cups cranberries
- 1 8 ounce can crushed pineapple (juice pack)
- 1/3 cup sugar
- 1 3 ounce package raspberry-flavored gelatin
- 1/2 cup boiling water
- 1/2 cup sweet red wine or cranberry juice
Directions
1. Peel, core and cut up apple. Using a food grinder or food processor with coarse blade, grind apple, and cranberries. Drain pineapple, reserving juice. Add with sugar to mixture.
2. In a large mixing bowl, stir together the gelatin and boiling water, stirring until gelatin dissolves. Stir in the apple-cranberry mixture.
3. Add enough water to the reserved pineapple juice to make 1/2 cup. Add pineapple juice and wine to gelatin mixture. Pour mixture into a 1-1/2-quart clear glass bowl. Chill for 4 hours or until firm. Makes 6 servings.
