Tangy cheese and juicy, fresh pears are sprinkled with toasted pine nuts, olive oil, and red wine vinegar in this 15-minute side-dish recipe.

Ingredients

  • 6 medium Bartlett pears, cored and sliced
  • 1 cup crumbled Gorgonzola dolce (Dolcelatte cheese) or blue cheese (4 ounces)
  • 1/3 cup pine nuts, toasted
  • 1/4 cup extra-virgin olive oil
  • 1/4 cup red wine vinegar
  • Cracked black pepper

Directions

  1. Arrange pear slices on chilled salad plates. Sprinkle with cheese. Top with pine nuts.
  2. For Dressing: In a screw-top jar, combine oil and vinegar. Cover and shake well. Drizzle over pear mixture. Sprinkle pear mixture with black pepper. Serve immediately. Makes 6 side-dish servings.
