White-on-White Pears with Gorgonzola

Ingredients
- 6 medium Bartlett pears, cored and sliced
- 1 cup crumbled Gorgonzola dolce (Dolcelatte cheese) or blue cheese (4 ounces)
- 1/3 cup pine nuts, toasted
- 1/4 cup extra-virgin olive oil
- 1/4 cup red wine vinegar
- Cracked black pepper
Directions
1. Arrange pear slices on chilled salad plates. Sprinkle with cheese. Top with pine nuts.
2. For dressing: In a screw-top jar, combine oil and vinegar. Cover and shake well. Drizzle over pear mixture. Sprinkle pear mixture with black pepper. Serve immediately. Makes 6 side-dish servings.
