Red Apple Salad

mayonnaise or salad dressing

whipping cream, whipped

tart red apples, cored and cut into bite-sized pieces (4 cups)

thinly sliced celery

chopped walnuts, peanuts or pecans, toasted

maraschino cherries, quartered or 1/2 cup green and/or red seedless grapes, halved

Lettuce leaves (optional)
Directions
- Drain pineapple tidbits, reserving 1 tablespoon of juice; set aside.
- For dressing: In a small bowl, combine mayonnaise, sugar, reserved pineapple juice and salt. Fold whipped cream into mayonnaise mixture; set aside.
- In a large bowl, combine apples, celery, drained pineapple, walnuts and maraschino cherries. Stir dressing into apple mixture until combined. Cover and chill up to 8 hours until ready to serve.
- To serve, if you like, line a salad bowl with lettuce leaves. Transfer the apple salad to the bowl. Makes 8 servings.
