Ingredients

  • 1 8 - ounce can pineapple tidbits (juice pack)
  • 3/4 cup mayonnaise or salad dressing
  • 2 tablespoons sugar
  • 1/8 teaspoon salt
  • 1/2 cup whipping cream, whipped
  • 3 medium tart red apples, cored and cut into bite-sized pieces (4 cups)
  • 3/4 cup thinly sliced celery
  • 1/2 cup chopped walnuts, peanuts or pecans, toasted
  • 1/3 cup maraschino cherries, quartered or 1/2 cup green and/or red seedless grapes, halved
  • Lettuce leaves (optional)

Directions

  1. Drain pineapple tidbits, reserving 1 tablespoon of juice; set aside.
  2. For dressing: In a small bowl, combine mayonnaise, sugar, reserved pineapple juice and salt. Fold whipped cream into mayonnaise mixture; set aside.
  3. In a large bowl, combine apples, celery, drained pineapple, walnuts and maraschino cherries. Stir dressing into apple mixture until combined. Cover and chill up to 8 hours until ready to serve.
  4. To serve, if you like, line a salad bowl with lettuce leaves. Transfer the apple salad to the bowl. Makes 8 servings.
