Ingredients

  • 1 5 - ounce package package baby spinach leaves or 4 bunches watercress (thick stems discarded), rinsed and dried
  • 1 11 - ounce can mandarin orange sections (juice pack), chilled and drained
  • Very thin wedges red onion or shredded carrot
  • Snipped dried apricots, dried cherries or dried cranberries
  • White balsamic vinegar
  • Crumbled feta cheese (optional)

Directions

  1. In a large bowl, toss together spinach, mandarin oranges, red onion and apricots. Drizzle with white balsamic vinegar. Toss gently to coat. Top individual servings with feta cheese, if you like. Makes 6 servings.
