Ingredients

  • 8 medium potatoes (about 2-3/4 pounds)
  • 8 ounces bacon, chopped
  • 1 cup mayonnaise or salad dressing
  • 1/2 cup finely chopped onion
  • 1 2 1/4 ounce can sliced pitted ripe olives (about 1/2 cup)
  • 1/4 teaspoon pepper
  • 1 16 ounce package process cheese spread, cubed (or use American cheese)

Directions

1. Cook potatoes in enough boiling water to cover for 20 to 25 minutes or till tender. Cool; peel and cube.

2. Meanwhile, cook the chopped bacon till nearly done; drain on paper towels and set aside.

3. In a very large mixing bowl, combine the mayonnaise or salad dressing, onion, olives and pepper; mix well. Fold in the potatoes and cheese. Transfer to a 13x9x2-inch (3-quart rectangular) baking dish. Sprinkle the top of the potato mixture with bacon.

4. Bake, uncovered, in a 350 oven for about 30 minutes or till bubbly. Makes 12 to 14 servings.
