Festive Red Slaw
Chill: 2 hrs
Ingredients
- 4 cups 1-inch pieces red cabbage
- 2 medium Golden Delicious and/or Granny Smith apples, cored and coarsely chopped
- 1/4 cup finely chopped red onion or green onions
- 1/4 cup salad oil or olive oil
- 1/4 cup rice vinegar or white wine vinegar
- 1 tablespoon coarse-grain mustard or Dijon-style mustard
- 1 teaspoon sugar
- 1/2 teaspoon salt
- 1/4 teaspoon celery seeds
- 1/4 teaspoon freshly ground black pepper
Directions
1. In a large bowl, combine the cabbage, apples, and red onion.
2. For dressing:In a small bowl, whisk together the oil, vinegar, mustard, sugar, salt, celery seeds and black pepper until well combined. Add dressing to salad; toss to coat. Cover and chill for at least 2 or up to 24 hours. Makes 6 to 8 servings.
