  • 6 slices bacon, chopped
  • 1/4 cup vinegar
  • 2 teaspoons sugar
  • 5 -6 cups torn lettuce
  • 3 small cooked potatoes, peeled and sliced
  • 2 hard-cooked eggs, peeled and chopped
  • 2 tablespoons chopped onion


  1. In a large skillet, cook bacon until crisp. With a slotted spoon, transfer bacon pieces to paper towels to drain; set aside. Reserve drippings.
  2. Stir vinegar and sugar into bacon drippings in skillet. Bring to boiling. Remove from heat and keep warm.
  3. In a salad bowl, gently mix together the lettuce, potatoes, eggs, and onion. Pour warm dressing over. Toss. Sprinkle with bacon; toss again. Makes 6 side-dish servings.
