All-American Greek Salad
Ingredients
- 1 medium red or yellow tomato, chopped or cut into small wedges
- 1 medium cucumber, peeled into alternate strips and sliced (1-3/4 cup)
- 2 medium red onions, thinly sliced (1 cup)
- 1/3 cup coarsely chopped red, orange, and/or green sweet pepper
- 1/4 cup pitted Kalamata olives
- 4 ounces feta cheese, cut into 1/2-inch cubes
- 2 tablespoons red wine vinegar
- 2 tablespoons extra-virgin olive oil
- 1 tablespoon snipped fresh oregano
- Salt and ground black pepper
Directions
1. In a medium bowl, combine the tomato, cucumber, onions, sweet pepper(s), and olives. Toss to combine.
2. Add the feta cheese, vinegar, oil, and oregano, plus salt and pepper to taste. Toss together gently. Makes 4 servings.
