Caribbean-Style Jerk Rub
Ingredients
- 1 tablespoon onion powder
- 1 tablespoon brown sugar
- 1 tablespoon dried thyme, crushed
- 1 1/2 teaspoons allspice
- 1 1/2 teaspoons salt
- 1 teaspoon fresh cracked black pepper
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground cloves
- 1/4 teaspoon ground red pepper
Directions
Combine all ingredients. Makes enough for about 2 pounds of meat. Seal unused portion in an airtight container.

Suggested Uses:
Use on pork ribs grilled over indirect heat. Use with dark meat portions of chicken and turkey. Rub on boneless duck breast and grill.
