Before grilling, apply this sweet-and-spicy seasoning on pork ribs, dark meat portions of chicken and turkey, or boneless duck breast. Grill over indirect heat.


  • 1 tablespoon onion powder
  • 1 tablespoon brown sugar
  • 1 tablespoon dried thyme, crushed
  • 1 1/2 teaspoons allspice
  • 1 1/2 teaspoons salt
  • 1 teaspoon fresh cracked black pepper
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/4 teaspoon ground red pepper


  1. Combine all ingredients. Makes enough for about 2 pounds of meat. Seal unused portion in an airtight container.


  • Suggested Uses: Use on pork ribs grilled over indirect heat. Use with dark meat portions of chicken and turkey. Rub on boneless duck breast and grill.
