Olive Relish
Chill: 2 hrs
Ingredients
- 1 cup chopped French green olives with Herbs de Provence, French green Picholine olives or pimiento-stuffed green olives
- 1/2 cup pepperoncini peppers, stems removed and chopped
- 1 small carrot, finely chopped
- 1/4 cup capers, drained
- 1/4 cup roasted red sweet peppers, drained and chopped
- 1/4 cup extra-virgin olive oil
- 2 tablespoons snipped fresh Italian (flat-leaf) parsley
- 2 tablespoons red wine vinegar
- 2 tablespoons finely chopped red onion
- 2 cloves garlic, minced
Directions
In a medium bowl, combine olives, pepperoncini peppers, carrot, capers, roasted peppers, oil, parsley, vinegar, onion and garlic; mix lightly. Cover and chill for 2 to 24 hours. Makes about 2 cups.
