Ingredients

  • 1 cup chopped, peeled pears
  • 1 cup finely chopped, seeded red and/or yellow tomatoes
  • 1/2 cup chopped red and/or yellow sweet pepper
  • 1/4 cup finely chopped onion
  • 1/4 cup frozen whole kernel corn
  • 2 tablespoons snipped fresh cilantro
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon ketchup
  • 1 1/2 teaspoons Old Bay seasoning
  • 1/2 to 1 1/2 teaspoons minced garlic
  • 1 1/2 teaspoons Dijon-style honey mustard
  • 1/2 teaspoon snipped fresh thyme
  • Blue corn chips and/or pita wedges

Directions

1. In a medium glass or plastic bowl (not metal), combine pears, tomatoes, sweet pepper, onion, corn, cilantro, vinegar, catsup, Old Bay seasoning, garlic, mustard, and thyme.

2. Cover and chill in the refrigerator for 2 to 8 hours. Serve with blue corn chips and/or pita wedges. Makes about 3 cups salsa (twelve 1/4-cup servings).

I have made this since it appeared in the magazine some years ago. It's colorful, great tasting and all-around fabulous, especially if you make it well ahead of time and let the flavors savor.
