Serve with a slotted spoon over grilled pork, smoked bratwursts or sausages, grilled chicken or salmon.

Ingredients

  • 1 15 - ounce can black beans, rinsed and drained
  • 1 medium cucumber, peeled, seeded and chopped
  • 1 medium tomato, seeded and chopped
  • 1/2 cup sliced green onions
  • 1/4 cup lime juice
  • 1 tablespoon snipped fresh cilantro
  • 1 tablespoon olive oil
  • 1/2 teaspoon ground cumin
  • 1/8 teaspoon salt
  • 1/8 teaspoon cayenne pepper

Directions

  1. In a medium bowl, combine black beans, cucumber, tomato, green onions, lime juice, cilantro, oil, cumin, salt, and cayenne pepper. Cover; chill in the refrigerator for 4 to 24 hours.
