Black Bean Salsa
Chill: 4 hrs to 24 hrs
Ingredients
- 1 15 ounce can black beans, rinsed and drained
- 1 medium cucumber, peeled, seeded and chopped
- 1 medium tomato, seeded and chopped
- 1/2 cup sliced green onions
- 1/4 cup lime juice
- 1 tablespoon snipped fresh cilantro
- 1 tablespoon olive oil
- 1/2 teaspoon ground cumin
- 1/8 teaspoon salt
- 1/8 teaspoon cayenne pepper
Directions
In a medium bowl, combine black beans, cucumber, tomato, green onions, lime juice, cilantro, oil, cumin, salt, and cayenne pepper. Cover; chill in the refrigerator for 4 to 24 hours. Serve with a slotted spoon over grilled pork, smoked bratwursts or sausages, grilled chicken, or salmon. Makes about 3-1/2 cups salsa.
