Corny Corn Bread
Bake: 20 mins at 425°F
Ingredients
- 1 cup all-purpose flour
- 1 cup yellow cornmeal
- 1/4 cup sugar
- 4 teaspoons baking powder
- 3/4 teaspoon salt
- 2 slightly beaten eggs
- 1 cup milk
- 1/4 cup cooking oil or shortening, melted
- 1 cup fresh corn kernels
- 4 slices bacon, crisp-cooked, drained, and crumbled
Directions
1. In a mixing bowl, combine flour, cornmeal, sugar, baking powder, and salt. Add eggs, milk, and cooking oil or melted shortening. Beat until smooth. Stir in corn and crumbled bacon. Turn into a greased 9x9x2-inch baking pan.
2. Bake the corn bread in a 425 degree F oven for 20 to 25 minutes or until golden brown. Makes 8 or 9 servings.
